From the coast of the Gulf of Mexico, salsa Macha is a traditional salsa from Veracruz. It is made by frying dried chipotle chilis, morita chilis or other varieties in a generous amount of olive oil, along with garlic cloves. The last two ingredients courtesy of the Spanish conquest, for sure. Then it is seasoned with salt. Many times peanuts are added & sesame seeds too.
